I had the craving for something zesty and spicy but not "hot".
This recipe is 2 part, the filling then a dressing
filling; 1+ 1/2 cups shredded rotisserie chicken, 1 can of black beans,1 can of mexi-corn,
1 cup mozzarella cheese, 1/2 c mild salsa/ mix well
dressing: 4 tbsp sour cream, 2 tble mayo, 1 tble cilantro, 1 lime zested and juiced/ mix, stir into filling.
fill your cleaned jalapenos, sprinkle a little cheese on top./ bake at 450 for 30 minutes.
This filling can be used in your bell peppers and poblanos too
